Preparation and Safety

Cooking instructions

Oven cook from chilled only.
180°C/160°C Fan/Gas 4. 30 mins per kg.
If freezing at home, defrost thoroughly before cooking.

Before Cooking: Refer to the weight label on the front of the bag for the specific roasting time. Preheat oven. Remove all packaging. Remove giblets from the body cavity. Ensure the protective wing guard is removed. Place the goose on a rack in a deep roasting tin and prick the skin along each side of the breast. Loosely cover the goose with lightly greased foil and place in the centre of the pre heated oven.

During cooking: Periodically spoon the juices in the bottom of the roasting tin over the goose to baste and return to the oven. Remove the foil 30 minutes before the end of cooking.

After cooking: Once cooked, remove the goose from the oven. Check goose is piping hot and no pink colour remains. Cover with foil and leave to rest for 20-30 minutes before carving.
