Cooking instructions

Oven cooked from chilled. If freezing at home, defrost thoroughly before cooking.

180°C/Fan 160°C/Gas 6. For medium, 1 hour 45 min

Before cooking: Remove joint from packaging and allow to breathe at room temperature for up to 30 minutes. Preheat oven to 180C/Fan 160C/Gas 4. Remove butters from the top of the joint and place to one side. Place the joint with topping facing up in a deep roasting tray and cover with foil. Place in the centre of the pre-heated oven.

During cooking: To cook rare 1 hour 25 minutes, medium 1 hour 45 minutes, well done 2 hour 15 minutes. Remove from the oven 5 minutes before the end of the cook, remove the foil and place the butters on top before returning to the oven for the final 5 minutes uncovered.

After cooking: Rest for 20 minutes on completion of cooking. Baste the joint in the extra melted butter before carving. This product should be cooked until piping hot throughout. If cooking rare, check the surface is fully seared/browned.

Storage

For use by date: see front of pack.
Keep refrigerated.
Once opened, use within 24 hours and do not exceed the use by date.
For best Quality, freeze as soon as possible after purchase and always within the use by date.
Once frozen use within 3 months.
Defrost thoroughly and use within 24 hours.
Do not refreeze once defrosted.
